Grilled Peach Breakfast Sundae

1 fully-ripened large peach or nectarine, halved, pitted
1 1/2 teaspoons melted unsalted butter or grapeseed oil
1/2 cup plain fat-free or low-fat Greek yogurt*
2 teaspoons honey or agave nectar
2 tablespoons lightly salted roasted pistachios, chopped
1. Brush the cut side of the peach halves with the melted butter. Grill, cut side down, over medium-high heat until rich grill marks form, about 5 minutes. Flip over and grill until heated through, about 2 minutes.
2. Place the peach halves, cut side up, on a plate. Top with the Greek yogurt, drizzle with the honey, sprinkle with the pistachios, and serve. Enjoy with a fork and knife.
*If desired, stir a few drops of pure extract of choice, such as vanilla or almond, into the yogurt.
